Ingredients
- absintheVieux Pontarlier, to rinse (Vieux Pontarlier, to rinse)
- 1½ ozrhum agricoleBarbancourt 3-star (Barbancourt 3-star)
- ½ ozcognacPierre Ferrand 1840 (Pierre Ferrand 1840)
- 1 tsp
- 3 dashesPeychaud’s bitterssee notes (see notes)
- lemon twist
Preparation
- 1.
Rinse a rocks glass with absinthe and dump.
- 2.
Stir the remaining ingredients (except the lemon twist) over ice, then strain into the prepared glass.
- 3.
Squeeze the lemon twist over the drink and discard.

This drink contains all things French: French absinthe, French cognac, French-colony rum, and bitters that originated in Haiti, a former French colony.

Death & Co. uses a house blend that is 2 parts Peychaud's to 1 part Bitter Truth Creole bitters.
