Terroir Old Fashioned

Ingredients
- 1 barspoonyellow chartreuse
- ¼ ozagave caramelsee notes(see notes)
- ¾ ozvin jauneor dry sherry(or dry sherry)
- 2 ozreposado tequila
- lemon twist
Garnish: honeycomb (optional)
Preparation
- 1.
Add all ingredients to a mixing glass filled with ice.
- 2.
Stir for 15–20 seconds, or until well chilled.
- 3.
Strain into a rocks glass over a fresh, extra-large ice cube.
- 4.
Express a lemon twist over the drink then discard.
- 5.
Garnish with honeycomb, if desired.
Notes
Agave caramel: Add 2 cups of agave nectar and 8 grams of sea salt (about 1½ tsp) to a large, wide saucepan. Heat until the mixture reads 350° on a pastry thermometer. Allow to caramelize, without stirring, for 7 minutes. Remove from heat and gently add 1 cup of room temperature water (be careful, as the heated agave mixture may spit). Mix well until even in consistency.
If you have a refractometer, the final caramel should measure 60 brix.
