pineapple juice
½ oz
lime juice
¼ oz
agave nectar
1 dash
Peychaud’s bitters

Garnish: lime wheel
Preparation
1.
Rub the rim of a rocks glass with the lime wedge, then coat with the spice rim and set aside.
2.
Add all ingredients to a shaker with ice and shake until well chilled.
3.
Strain into the prepared rocks glass over ice.
4.
Garnish with a lime wheel.
Notes
Red-chili-infused Aperol: Add 3 or 4 red chili peppers, cut lengthwise, to a 750 ml bottle of Aperol. Let infuse for 2-3 days or until desired flavor is achieved, then strain.
Spice mix: combine equal parts sea salt and Old Bay seasoning.
