Garnish: thick grapefruit slice and thyme sprig
Fill the glass with ice, add all of the ingredients except the wine, then lightly stir to combine.
Top with sparkling wine.
Thyme Syrup: Bring 4 oz. of thyme, 2 cups of water, and 2 cups of sugar to a boil. Remove from heat and allow to steep for 1 hour. Strain and cool. Will keep in the refrigerator for a week.
