Lavender Syrup

Ingredients

  • 2 tsp
    whole allspice
  • 1 tsp
    whole cloves
  • 4
    cinnamon sticksapprox. 1/2 oz by weight
  • 2 quarts
    water
  • 1 cup
    culinary lavenderdried, approx. 1 oz by weight
  • 2 quarts
    raw sugar

Instructions

    In a large saucepan or pot over medium heat, add the allspice cloves, and cinnamon sticks.

    Toast for 2–3 minutes or until fragrant and aromatic.

  3. 3.

    Add the water and let simmer for 5 minutes.

  4. 4.

    Add the lavender and simmer for an additional 15 minutes over low heat.

  5. 5.

    Add the sugar and stir until mixture thickens and sugar is fully dissolved.

  6. 6.

    Remove from heat and allow to cool, then pour syrup through a strainer to remove solids.

Notes

Keeps refrigerated for 2–3 weeks.
