Scarlet Spritz
A riff on the Aperol Spritz →

Ingredients
- 1½ ozAperolstrawberry-infused; see notes(strawberry-infused; see notes)
- ½ ozLillet blanc
- 2 dashesrhubarb bitters
- sparkling winechilled(chilled)
- absintheto rinse(to rinse)
Garnish: lemon twist, strawberry
Preparation
- 1.
Coat the inside of a coupe or Nick & Nora glass with absinthe, then discard the excess and set aside.
- 2.
Add the strawberry-infused Aperol (see notes), Lillet Blanc, and bitters to a mixing glass with ice and stir until well chilled.
- 3.
Strain into the prepared glass.
- 4.
Top with sparkling wine.
- 5.
Garnish with a lemon twist and speared strawberry.
Notes
Strawberry-infused Aperol: Soak ½ pint fresh strawberries in 750 ml of Aperol for at least 8 hours (or overnight). Strain out solids and store in the refrigerator.
