- ½ ozBigallet China-Chinascant pour (scant pour)
- ¼ ozsweet vermouthBordiga Rosso (Bordiga Rosso)
- ¼ ozsweet vermouthLustau Vermut Rojo (Lustau Vermut Rojo)
- lemon peelexpressed (expressed)
Preparation
- 1.
Combine all ingredients in a mixing glass with ice and expressed lemon peel.
- 2.
Stir to chill, then strain over a large ice cube in the glass.
- 3.
Garnish with a separate, non-expressed lemon peel.

Bartender's note
This cocktail calls for an under-utilized technique called the Royal Stir, where you stir the ingredients with an expressed lemon peel. This adds brightness and texture without diminishing the final aromatics.
