Kumquat Marmalade

Ingredients
- 0.5 cupgranulated sugar
- 0.5 cupwater
- 2 cupskumquats(cut into quarters)
- 1star anise pod
- 4black peppercorns
- 1 tspginger root(grated)
- 1cinnamon stick
- 2cardamom pods
- pinchsaffron
Instructions
- 1.
Combine sugar and water in a small saucepan and bring to a low boil.
- 2.
Add the kumquats and squash them with a potato masher to release more flavor.
- 3.
Bring back to a low boil and add the remaining ingredients.
- 4.
Simmer for 15 to 20 minutes, until the liquid has reduced (it will thicken more as it cools).
- 5.
Remove from heat and allow to cool before using.
Notes
Keeps tightly sealed and refrigerated for up to 1 month.
