Waterloo Sunset

• 7 piecemint leaves
• 0.5 ozcane sugar syrup
• 1 ozszechuan peppercorn-infused plymouth gin
• 1 ozbeefeater london dry gin
• 0.5 ozDolin blanc vermouth
• 1.5 ozwatermelon juice
• 0.75 ozlime juice

Preparation

   In a shaker, gently muddle the mint leaves and syrup.

   Add the remaining ingredients and shake with ice, then double strain into a double rocks glass over 1 large ice cube.

   Garnish with the mint sprig.
