The Merchant Hotel’s Dark ‘N’ Stormy

• 11⁄2 oz. dark rum (The Merchant Hotel uses Goslings Black Seal)
• 3⁄4 oz. fresh lime juice
•  ⅓ oz. simple syrup (1:1)
• 1⁄4 oz. ginger juice
• 1⁄4 oz. falernum
•  chilled soda water

Preparation

1. 1.

   Shake the first 5 ingredients with ice, then strain into an ice-filled glass and top with soda. Garnish.

   Ginger Extract: Press fresh ginger through an electric juicer, then strain the liquid; use immediately.
