Combine all of the ingredients except the sparkling white wine in a glass. Top with ice and sparkling white. Gently stir up and down with a barspoon to incorporate. Strawberry ShrubSlice and remove tops from 1 lb. of strawberries. In a sealable container, add 2 cups of white sugar on top of the strawberries. Cover and leave at room temperature overnight, periodically gently stir and muddle it. The next day, stir sugar into juice well and then strain. Add 33% (the weight of the syrup multiplied by 0.33) white balsamic vinegar. This will for about 9 to 12 months in the refrigerator.
