In a shaker tin, combine the tequila, vermouth, syrup, and lemon juice. Briefly shake with ice to chill and strain into a wine glass over fresh ice. Add seltzer and Cava. Stir briefly to combine. Garnish with an orange slice and pineapple wedge.
Passion Fruit Syrup: Combine equal parts passion fruit purée with rich simple syrup (2:1). Shake to combine.
