0.5 ozRio Red Grapefruit Cordial
3 ozclub soda

Garnish: lime wedge

Preparation

1.
Add all ingredients except club soda to a cocktail shaker
2.
Fill with ice and short shake for 5 seconds
3.
Strain into a highball filled with ice
4.
Top with club soda

Notes

A lush highball that pairs creamy toasted coconut with effervescent grapefruit. Mint and rum gives this one some refreshing mojito vibes. Adapted from Demi Natoli's original recipe.
