0.5 ozDemerara Gum Syrup
1.5 ozrum
0.5 ozamontillado sherry
0.75 ozlime juice

Garnish: lime wheel

Preparation

1.
Add all ingredients to a cocktail shaker
2.
Add ice and shake hard for 10 seconds
3.
Strain into a chilled coupe glass

Notes

The oxidized, nutty aromas of sherry are excellent with pot distilled rums. We'd suggest something that is not overproof, and with good baking spice and orange notes.
