Add the ingredients, except the salted cream, to an ice-filled shaker. Shake and strain into the chilled glass. Layer the top of the drink with salted cream and a few drops of olive oil, to taste. Salted CreamAdd a small pinch of salt to 3 oz. of heavy cream. Use a milk frother to whip up the cream until it thickens but remains liquid. Be careful not to overdo it.
