Garnish: olive oil drops
Add all ingredients except the salted cream to an ice-filled shaker.
Shake and strain into the chilled glass.
Layer the top of the drink with salted cream and a few drops of olive oil, to taste.
Rich Demerara Syrup: Combine 1 cup demerara or turbinado sugar and 1 cup water in a small saucepan over medium heat and stir until sugar dissolves. Remove from heat, let cool to room temperature, and transfer to a clean glass jar. Cover and keep refrigerated for up to 2 weeks. Salted Cream: Add a small pinch of salt to 3 oz. of heavy cream. Use a milk frother to whip up the cream until it thickens but remains liquid. Be careful not to overdo it.
