Add all the ingredients to a shaker and shake vigorously for 15 seconds. Double strain into the glass. Top with the peppermint foam and garnish. Peppermint FoamCombine 1 cup of water, 1 cup of simple syrup, 1 cup of creme de menthe, 1/4 cup of white sugar, and 1/2 Tbsp. of xanthan gum in a blender and blend for 1 to 2 minutes. When ready to serve, froth it up with a milk frother. Will keep in a sealed container in the refrigerator for up to 3 days.
