Ingredients: 0.5 oz Almond Orgeat Syrup; 0.25 oz Demerara Gum Syrup; 1 oz aged rum; 0.5 oz Jamaican rum (Smith & Cross recommended); 0.5 oz orange liqueur; 2 oz IPA; 0.75 oz fresh lime juice

0.5 ozorange liqueur
2 ozIPA
0.75 ozfresh lime juice

Garnish: cocktail umbrella

Preparation

1.
Add all ingredients except for IPA to a cocktail shaker
2.
Add ice and shake hard for 10 seconds
3.
Strain into a highball glass filled with ice and top with IPA

Notes

Like with Campari in the Bitter Mai Tai, this classic tiki cocktail does well with the addition of a citrusy-bitter ingredient. Here, reach for a bright, medium-bitter IPA to lengthen this drink into carbonated and slightly hoppy delight.
