Making its debut in the Café Royal Cocktail Book in 1937, the Lion's Tail has re-emerged as a contemporary classic. A critical element of tropical drinks and cuisine, allspice — called “pimento” in Jamaica — has flavors of clove, cinnamon, nutmeg, and pepper. St. Elizabeth Allspice Dram is a traditional liqueur with a base of smoky Jamaican pot-still rum. Made famous by the pioneers of tiki drinks in the 1940s, allspice dram is today one of the most versatile ingredients in the modern bar. It adds sweet, warming spice note to toddies and mulled wine, rum punches, and sangria.
