Shake the first 3 ingredients with ice, then strain into a glass filled with fresh ice. Top with ginger beer, then garnish.
Ginger SyrupUse an electric juicer to extract the juice from several pieces of fresh ginger. (Alternately, grate or blend the ginger then press through a fine-mesh strainer to extract the juice.) Weigh the amount of juice, and add it to a blender along with an equal amount of granulated sugar. Blend until fully combined, and use immediately (the ginger’s flavor rapidly fades). Keep the remainder refrigerated, and use within 3 days.
