Combine the first 4 ingredients in a shaker and shake with ice to chill. Strain into a chilled coupe and top with sparkling wine.
Cinnamon SyrupCombine 1 cup of water and 1 cinnamon stick (broken with a muddler) in a pot and bring to a simmer. After 10 minutes add fresh water to return the amount to 1 cup and add 1 cup of sugar. Stir to incorporate the ingredients, then remove from heat once the sugar dissolves. Strain the cinnamon out of the mix, then bottle and refrigerate for up to 2 weeks.
