Fill a Collins glass with ice and chilled club soda. In a shaker, combine the rest of the ingredients. Add ice and shake hard, then double strain into the prepared glass. Garnish. Cantaloupe RumChop 500 grams of fresh, seeded cantaloupe and add to a blender with 250 ml of Demerara rum and 250 ml of white rum. Blend on high for about 2 minutes, then strain through a coffee filter–lined chinois. The rum will keep refrigerated for up to 1 month.
